We do London Broil steak sandwiches. Sliced thin with arugula, provolone cheese, and a little horseradish mayo.

I time it out to finish at the end of Aggie game. We get home and have the best steak sandwiches within a few minutes of walking in the door. Really cheap cut of meat that turns into almost tenderloin.

I bought a cheapo "party stacker" cooler and used a 3" hole saw in the lid. Holds water really well for longer cooks, and I store all the gear in there when it's not in use.

Yep. Same rig here. It's great for long cooks because you dont need to ever add water. It'll also hold a surprising amount of meat (2 briskets cooking, 4 reheating, 8-10 racks of ribs, etc)
