Just bought some nice SS cookware - Williams Sonoma Signature Thermo-Clad SS.

Is there something that needs to be done to a new SS skillet to "season" it, similar to cast iron?

Nothing to do up front. Just make sure you are cooking with some fat in the pan and if something ends up stuck on just boil some water in the pan until it releases.

Bar keepers friend works great but Dawn Platinum is just as good.

make sure the pan is hot before putting any food in to help prevent sticking (in addition to always using a fat, as mentioned above).

can make a paste with salt and any kind of vinegar to remove any stuck on food and restore the shiny appearance.

That's like one of its biggest benefits over aluminum and non-stick (besides sears and pan sauces)

Barkeeper's Friend (the powder, not the liquid) works great for removing burned on grease that you sometimes get on the rim and bottom of the pan. If you have stubborn spots on your cookware (not the surfaces where food comes into contact), Carbon-Off is awesome.

I'm glad yours are up to the task. Seems to wear out mine quicker, so I just hand wash.

I just buy whatever the restaurant supply store sells. Couldnt tell you the brand name.
