I made pepperoni sticks

And they are awesome! Fairly closely followed this video (hard to listen to the guy but good instructions) and they turned out really good. However, after smoking them to 155 and shocking them, I dehydrated them at a low temp (~100 degrees) for approximately 12 hours creating the wrinkled slim jim type look/texture. If you have the equipment, you should give it a try! Or if you're in DFW then you can try some of mine.

Damn, that look really good. I'd take a pepper jack cheese stick and one of those pepperoni sticks put them side by side and take a bite. I'd happily snack for a while!!! Good job!!!

Thanks. I made some pepperjack snack sticks last year and didn't like them, but I think it was because I used the high temp cheese and there wasn't much flavor. I've since learned you can replicate the high temp cheese by simply cutting it up yourself and putting in the fridge (uncovered) for a few days. I might try it again with a better quality pepperjack cheese.

Funny you say that. I ordered some bigger edible collagen casings so I can do just that next time I make these sticks. May make some more this weekend because they were a hit with friends and family.

My friends and family enjoyed them so much that I made another batch of 20 lbs this past weekend and sold them all in 5 minutes. I have little kids so I can't do it, but I'd like them to be more spicy, so if you like spice then I'd definitely up the cayenne and/or crushed red pepper.

Definitely haven't figured that out, and not sure I'm going to. If you're in DFW, or ever come up here, I can save you some from the next batch if you want. I think these are going to be something that I make pretty often based off the feedback so far.
