How long do you want to ignore this user?
I'm mostly a craft beer guy, but I do like a good cocktail. However for cocktails at home, it's pretty much fresh margarita or an old fashioned.

I'll have bourbon or scotch on the rocks from time to time as well. Yes, I can Google, but easier to highlight what I like and ask for recommendations vs looking through recipes that have crap I don't like. For instance, I hate gin. I'm also not big on sweet drinks. My margaritas are tequila, lime juice, and triple sec/cointreau.

Don't worry about what I have on-hand, I can go buy stuff.

The French 75 is a good option. You sound like a dry champagne kinda guy. Go buy a decent brut and a good bottle of cognac. Get a prosecco if that's your thing or you want to balance the liquor. A lot of 75 recipes use vodka or gin, and it's ok to be wrong. Good cognac is the way to go.

1oz cognac stirred with ice and strained into a champagne flute.
Twist of lemon in the flute.
Top up flute with chilled champagne.

I'm pretty much the same as you. Craft beer, Old Fashioneds, Fresh Margarita/Ranch Water and that's about it. Generally like to keep it fairly simple.

The only thing I've added to the rotation lately is the 1944 Mai Tai:

Switch the tequila for Mezcal. More interesting margarita. Del Maguey Vida is a reasonably priced, but good mezcal for cocktails.

Pisco Sour - similar flavor to a margarita, but unique. A good brunch drink. If you can't handle egg whites in a cocktail, then are you really cocktailing?

Manhattan or Sazerac are easy to make and good variations if you like old fashioned.

If you want to put work in, make a Benton's Old Fashioned.

I also love to make The Brave from Anvil in Houston, but it takes some specific ingredients.

If you like bitter, it's hard to go wrong with a Negroni variant like a boulevardier or a mezcal Negroni.

If you like margaritas, there is a whole family of cocktails to experiment with in the same family (sours). A margarita is just a tequila sour. There's an almost endless variety of options that follow the basic recipe of booze, citrus, sweetener.

Try a whiskey sour (whiskey, lemon, simple). Or since you already have triple sec on hand sub that in for the simple and you have a variation of the sidecar.

One of my favorite cocktails that everyone seems to love is the Paper Plane. Requires you to pick up Aperol and an amaro, but honestly amaros are some of my favorite things to keep around anyway because they are really fun to play with in drinks. The Paper Plane is an incredibly well balance combo of boozy/citrusy/bitter/sweet.

I like tequila old fashioneds from time to time

tequila, orange bitters, ice, and maybe a little sugar if I'm not being lazy.

To give it more depth. Use a rich simple syrup 2:1 using demerara sugar and dry curacao. You can futz around with the rums but using Smith & Cross or Dr Bird to give it more funky punch and Appleton Estate 12yr makes a very fine cocktail.

I haven't had one of those since I was in south Africa 10 years ago. They were made with home distilled rum my buddy's brother makes. Good call.

Can't remember how much of a coffee guy you are, but I made a Revolver last week that went over well

2oz bourbon
.5 coffee/espresso liqueur
2 dashes orange bitters
Flame an orange peel as a garnish if you're feeling fancy

I used Bulleit and Mr Black cold brew liqueur

0% coffee guy. Love the smell, don't really like the taste. I can drink it in a pinch, but not a preferred flavor.

No worries, I can leave the coffee out, add a sugar cube, add a couple more dashes of bitter, add a cherry, and pour it over a large ice cube.

Try mint julep. They can be pretty sweet but you can certainly go light on the syrup. Delicious!
