I've had a version(?) of Derby Pie that was a dense walnut pie filling with chocolate chips/morsels and held togetherness by what seemed similar to the custard that's found in pecan pie.

Google has yielded less than optimal results.

I have been using this recipe, but slightly altered

https://www.pillsbury.com/recipes/kentucky-chocolate-and-walnut-pie/58a2f52d-2030-4713-a23d-65f85f025f8a

I use brown sugar instead of white.
Chop up good dark chocolate bars until I have a cup.
Since I don't keep alcohol at home since getting sober, I buy an airline bottle of Jack Daniels. Alcohol bakes out so I am okay with that.
Same thing with making my crust. I buy airline bottles of vodka and do half ice cold vodka and ice cold water.

Maybe my oven is off, but I tend to bake it 45 minutes to get crust the perfect color.

I hate pecans, so I have been making this to take to Thanksgiving dinners so I have choices other than pumpkin.

This might be the reason for your lack of info:

Similar to the Derby Pies sold around Louisville, but Derby Pie is a registered trademark so we have Thoroughbred Pie or Kentucky Chocolate Walnut Pie.

Americas Test Kitchen had a recipe from 2012.
