Great Grandma used this for both fruit and sausage. You could throw a rock from her house and hit the Village Bakery in West. The sausage was always Nemecek sliced in half lengthwise. Vincek's in East Bernard is probably the closest you can find today. Slovaceks bought the Nemecek brand, but so far hasn't used their old recipe for a smoked sausage. Fruit was usually prune, apricot, and cherry.

I'm a baking moron - is that 1 single recipe or 2 separate? Do you do everything above "Mix into step 1" then after that rise, do everything under "add" ?

What is "mix in enough flour to make 2 -3" ???

Lastly, what is in ( ) under odmladek ?

Poolish, Biga, Levain. Odmalek - Basically all different slang cultural names for a wet & loose sponge dough that goes through a rise before adding in the remaining flour and other ingredients.

The recipe is a single recipe

It should be read as:
"mix in enough flour to make odmalek"
2 -3 cups flour

I tend to keep mine on the wetter side like a poolish

Funny to think about. She was a sweet lady who loved life and people and would have shared it with anyone who asked. Anyone who won't share a recipe is a sad little insecure person.

My grandmother's recipe is very similar to Fido's except that it calls for allowing the poolish to rise twice, and then allowing for a rise after the kolaches are filled.

I assume she's referring to how Fleischmann's comes in measured packets. So it's 3 packages of Fleischmann's or 3 tbsp. of yeast (for those who buy in bulk or make their own).

My question for all the Czech's out there: what is odmelak/odmladek? That one has stumped the google.
