Fresh corn with corn stock is good.
Dried porcini mushroom is another one I like.

I'm not worthy to wash some of your dishes, but I do ask questions….. I really didn't know what risotto was until I looked it up. I love rice.

With fall coming (hopefully soon) we like butternut squash risotto.

Our normal go to is a mushroom risotto.

This is excellent. An Instant Pot makes risotto so easy. No standing over a stove and constantly stirring.

If you have a good Vietnamese restaurant around you, see if you can get your hands on some of their pho soup base. It makes a good risotto stock.

Arborio rice. We've done a couple of different lobster risottos so far. I think I might try a crawfish one next because we have tails in our freezer.

I've found the carnaroli and vialone nano rice at some Italian specialty shops, and the finished texture is better than Arborio.

I like to serve it plain, with a 25 Year Aged Extravecchio Balsamic Vinegar drizzled over the top. Goes great next to a duck breast or backstrap.

Yep. Every grocery store I've been to has had it. It's usually in a plastic container instead of a bag.

Brussels sprouts risotto is favorite in my house. This is a great recipe. Brown butter makes a huge difference.

My wife's favorite dish that I make is a pancetta, sage & gorgonzola risotto. Rich, creamy and delicious!
