My family and I enjoyed an incredible meal at Grace in Fort Worth this weekend. My son order the filet with the blue cheese sauce or topping, and it was probably the best thing I have tasted in some time. Menu says its a topping, but it had a very creamy consistency. Anyone have a recipe? Thanks

It's generally a Bleu cheese mixed with butter in some ratio. You could use a truffle butter if you wanted to get real fancy with it.

Reduce some cream and add blue cheese? I wouldn't use truffle with blue cheese personally as it's a pretty overpowering flavor

yeah, may want a touch of roux in the cream reduction then just a bit of blue cheese and maybe some parmesan to salty it up, but that's a personal preference.

I've had a bleu cheese, horseradish cream served with prime rib. I'd guess it's just a mayo/horseradish/bleu cheese mixture? I bet it's amazing on steak too.

Reduced cream and use a soft bleu cheese like Danish or Maytag. Don't overthink this one
