Ok folks, some of you may know I've been very lucky to have been brought into a project with Chef David Welch and his wife Teresa Welch. FireCraft BBQ is going Brick and Mortar and I'm super excited to be helping!

Fire Craft BBQ made it into the top 5 Houston Chronicle Best of the Best competition in FOUR categories! Please go vote for them in Best All Around, Best BBQ, Best Brisket and Best Ribs! Voting started today and you can vote once a day!

I know that "competition" is super sketch. Any vote that puts Olive Garden at the top of the Italian category is sketch. Trust me when I say the BBQ entrants are legit.

If nothing else, go vote for Dave to get a local guy some good exposure. Lord knows we need good bbq joints in Houston.

I think they were just refuting your insinuation that Houston doesn't have good bbq. The barbecue scene is thriving in Houston. It doesn't take anything away from you. And good for y'all. I look forward to learning more about your spot.

Seriously, good luck on your venture. It's a very booming market in Houston these days for good quality barbecue. But that also means you need to make sure your team has raised their game. You are competing with some of the big dogs of Texas barbecue, a bunch of whom are my friends.

Always love to see innovation in the barbecue scene, and know that after looking at the list and talking to several pitmasters, in order to shine, you're going to have to do something other than the standard three meets two sides plate.

I didn't read it that way. Thought he was being funny and making a joke. Says in the OP that the BBQ entrants are legit. Just my take. And on this side of town, we could use a great bbq joint. Either way, we all know the best BBQ is in my backyard.

Thank you and you're dead right. Chef Dave had done fine dining for nearly 15 years before jumping into BBQ. He's been very successful with his food trailer for 6 years and this is the next phase. Idk if it's anything particularly innovative but his recipes are solid across the board and his execution is flawless. In the Kingwood market it's a much needed option.

We have a few good ones in the area. Texas Q, Rusty Buckle, Tin Roof (Dave was pitmaster there at one time), and a couple of other smaller ones, along with all the major chains. Dickies, Pappas, Spring Creek, etc.

He picked a good spot and specializes in catering. He'll be an even bigger corporate luncheon and event go-to that he already is in no time.

I got to be a fan of his during quarantine. Had him cater my step dads retirement party and got to know him a bit. Found out he was building out a brick and mortar and offered to assist in any way I could since that's sorta what I do for a living.

It's been fun seeing how what I do for my company applies to a restaurant.

Damn right Kingwood needs good options, because the best brisket in this area is HEB. Tin Roof has gone down hill and is just average now, IMO.

The only thing I'll hold against them is Great Harvest being kicked out of that spot, beause I loved that place.

I'm glad you posted that! Great Harvest was a great operation but it's important to understand the owners wanted to retire and while they tried to sell the franchise to their manager, the manager's financing failed and they then decided to close it. There was no forcing out.

You're right about HEB though. Their brisket is not bad at all but the beef ribs on Fridays are REALLY special. Give those a try if you haven't yet.

I've eaten from the food truck several times, and it's legit. I had heard they're going into that place but haven't driven by there to see what progress has been made, so I'm glad he's giving us an update.

For those in the Kingwood area, there's a food truck off of North Park by the fireworks place (you'll see the grass huts) that has really good BBQ as well. It's also BYOB, so that helps.

One more bump for brag… Fire Craft BBQ, who took peoples choice at the last St Arnold's Houston BBQ Throwdown (2019), missed people choice this year by one vote to Daddy Duncan's. Great event and special call out by Allison Cook (the hack, blind squirrel found a nut!) who was a guest judge.

Opening of brick and mortar very soon.
