I love breakfast tacos.

I love to make a basura taco. My base is a small amount of chopped bacon to grease the pan and provide a little bacon flavor, thrown in chopped leftover French fries or tater tots, crisp in the bacon grease, throw chorizo in, once browned mix in your eggs (don't beat them just dump a bowl of eggs in and scramble in the pan). Spoon some of this into a homemade tortilla, a swipe of refried beans and top with cheese (I'f desired) and homemade pico. For variations I will chop up leftover brisket and or a spoonful of leftover carne guisada and put it in the taco as well. Sometimes I don't add the egg and just lay an over easy fried egg on the tortilla before filling it. It's an awesome mess.

The key is not to over fill the taco.

If I ever have leftover bacon jalapeño cheese poppers leftover I chop them up and scramble them with eggs and cheese. Makes an awesome breakfast taco.

I'm not a big fan of eggs. One of my go to tacos is bacon and potato with plenty of salsa.

I don't eat eggs either, but here's what's in my rotation. Maybe you'll find something worth adding to yours!

Potato/chorizo
Bean/chorizo
Potato/sausage (smoked or crumbled pan sausage)
Bean/smoked sausage (like the bill miller's breakfast taco)
Papas rancheras (never tried to make this at home though)
Potato/bacon
Bean/bacon

Basically pick a carb (potato or beans) and a meat and try it out and you cannot go wrong. Add your own favorite salsa or other add on like cheese and call it good.

Picadillo or carne guisada or barbacoa is my ultimate God tier breakfast taco but if I'm making my own I keep it pretty simple.

I used to agree with this until I got a taco at the Donut Palace in Lampasas on a work trip years ago. I asked for a potato and egg. Lady got up, grabbed a taco wrapped in wax paper, popped into microwave, voila. That taco was tossed from the window before I left the city limits.
And buccees breakfast tacos.They really need to step up their game.


I'm old enough to remember when Buccees breakfast taco setup was similar to Stripes and they made them right in front of you to order with homemade tortillas. This was before the first megastore. They are now made of powdered eggs & factory tortillas and flat out suck. Not to mention they won't make one your way anymore.. They're printing $$ so they don't give two ****s about quality or stepping up their game.

If you start with a fresh homemade flour tortilla, it's hard to screw up a breakfast taco, unless you start adding things like soyrizo to it.

Speaking of eggs in breakfast tacos ....... Do yall scramble the eggs first and then add them to the pan or do you break them whole in the pan and scramble after they have cooked for a bit ? IMHO the latter way makes for a better presentation.

I have always liked "Asado de Puerco" more than Carne Adobada, but that is just a personal preference. For tacos "Asado de Puerco" is better for me, and especially in gorditas. Below is as good a recipe as any for it. I like the meat boiled more than simmered and fried. But both are ok.

I thought this recipe looked familiar and then I see that she says some people call it "Chili Colorado" which I have heard of. That looks good too!

Not technically homemade, I use these and they're pretty close. I have a cast-iron comal and cook them till they start bubbling and flip.

Ive toured dozens of kitchens and I've never see a single one do this. Mexican joints that cook tacos to order keep a stainless steam pan with pre-scrambled eggs next to the flat top and ladle them out. The really good ones use clarified butter. Most use oil

Just glanced at this again, I am surprised Machacado and egg hasn't been mentioned, or maybe I missed it. I love machacado and egg tacos with a really hot, hot sauce. Common in S. Texas and Mex, not so common further north, but very good.

We do a variety of breakfast tacos.

When we work cattle the first thing we start is breakfast about 3 hours before daylight. Meats include sausage, bacon, chorizo, ham, ground beef, brisket, pulled pork, smoked sausage even some shredded chicken sometimes.

Carbs include potatoes, beans, Spanish rice

Then eggs.

We make a variety and typically will roll them in foil wrappers and place in a variety of coolers to keep them warm. The crew hits about an hour ahead of daylight and we drink coffee, eat tacos, tell stories and plan the day. Then just before daylight we hit it hard. We will run a couple hundred head through the chute for branding/working. Then break about 10:00 for another taco or two with a cup of coffee then finish out around 2. My wife will start fajitas/steaks/lunch and we will all pile into the office/farmhouse for a late lunch then ribeyes go home with everyone as thanks for the help.

Sounds a lot like life on the Yellowstone. I understand why you didn't post about needing to occasionally break to drive someone to the train station.

Make no mistake. There's times a trip to the train station has crossed my mind for some folks that help. Pretty sure my wife would object to the trip with my sons.

Never have liked beans. Taste and texture are just awful and they ruin anything and everything they touch. They simply aren't needed, especially for a good breakfast taco.
