Here's a great recipe. Don't skip the Pate or you might as well not even call it Wellington. Also, if you are around Trader Joe's their Puff Pastry is miles better than Pepperidge Farm.

Where do I buy the liver in person on DFW? And what do I substitute for the mushrooms due to allergies?

These are the things I've been struggling with.

NM. That recipe uses a chicken liver pate. I can find plain ol' chicken liver everywhere.

Any suggestions on a good place to order a prepared meal? We just don't have the time or energy to make stuff ourselves this year. Quarantine, no family coming to see us, newborn and a toddler.

Christmas Eve will be Beef Wellington, mushroom risotto and green beans. Normally that's dinner out but we cancelled all that this year so I went with plan B.

Christmas Day Prime Rib, butter poached new potatoes and Brussels Sprouts.

23rd - Leg of lamb with red wine and cherry sauce.
24th - prime rib with a cognac mushroom sauce
25th - shrimp and crawfish gumbo

I made a test run on the prime rib on Monday. I may need a new wardrobe and a heart stint after the week is done.

Lunches will be chicken Marsala and chicken mushroom prosciutto.

Desserts include a poached pear and an Italian cream cake.

And nobody has mentioned the wines yet. Right bank wines at my house from St Emilion and a Vouvray from the Loire valley.

My homemade eggnog is all gone,

Alright, we've finally finalized our menu.

Christmas Eve: Pasta Primavera with butter-sauted crab, shrimp, and clams. Not quite feast-of-seven-fishes, but lobbed in that general direction.

Christmas Day: Lasagna. My wife's tradition. Gonna be weird doing this by ourselves because it's only us, when it's usually her family complete with 70 cousins.

Day after Christmas: traditional pork tamales.

Champaign punch throughout.

Great minds think alike! Christmas dinner will be 4.2 pound beef tenderloin, pan of roasted brussel sprouts, pan of au gratin potatoes, and adding a very large Alaskan salmon filet to make sure we have enough.
Bourbon walnut pie, chocolate meringue pie, coconut meringue pie and bread pudding for desserts.

Christmas Eve was my blue ribbon chili. Meant to make corn bread, but ran out of time, so served over tortilla chips. My secret to my chili is 1/3 ground beef, 1/3 stew beef, 1/3 pork sausage.

Christmas day we do a bunch.


Wife made sausage balls and egg frittata. I made biscuits with sausage gravy and bacon. Pillsbury made cinnamon rolls and orange rolls.
