We're thinking of doing tamales from scratch. I'm whiter than college-ruled notebook paper, but I want to do something out of the ordinary.

It depends on what kind of different. I have known some people who do a whole lasagna meal for Christmas. Me, if I was being adventurous, I'd try something Mediterranean, Lebanese, or Middle-Eastern. Those are some straight-up great cuisine that aren't too difficult to make and you'll love the taste.

I make hummus, gyros, spanakopita, etc regularly. That's right in my wheelhouse.

Tamales on the other hand, are very out of the ordinary for me. My church made some in high school for a fundraiser, but that was almost 20 years ago now. Might be time to try my hand at it again.

Crabmeat Enchilladas with Charo Bean, Spanish Rice and Quacamole...family won't let me make anything else after I did these 8 years ago.

I'm not sure what we are doing yet, but my main focus is usually the dessert. I think I'm going to do a chocolate chip cake with passion fruit curd and coffee buttercream. If I have to do 2 desserts, I might do a chocolate cake also, although I've been craving a lemon meringue or key lime pie.

Great minds think alike. If you don't do this already, seek out an international market for macaroni #2 and kefalotiri cheese. It's worth it. Also making spanakopita and pulling our own phyllo dough.

Here's a great recipe. Don't skip the Pate or you might as well not even call it Wellington. Also, if you are around Trader Joe's their Puff Pastry is miles better than Pepperidge Farm.

We no longer do a formal meal

I will roast a turkey breast, or bake a ham if Benny can come up with 6 reasons other than "I like ham more than turkey mom!", make a soup, and then we just feast on snack foods all day.

Everyone knows they can drop in whenever because there is no meal, but there is food to eat.

I don't have time to cook bunches of side dishes when he is getting steering wheels for his joy cons, plus three new games, when I need to keep showing my dominance in Mario Kart.

We've started doing a brunch. Wife didn't like staying up late with Santa Claus on Christmas Eve, getting up at the crack of dawn with the kids on Christmas day, then having to make a big meal. So now after presents, she and I make brunch, then by noon, we're done for the day.

My contribution this year will be this Biscuit and Gravy Skillet I found.

Christmas Eve will be our traditional steaks on the grill.

Christmas Day will be duck. Haven't settled on the exact recipe yet, but it will probably lean toward the heavy side with maybe a red wine-based sauce.

Still planning the menu.

Quiche & mimosas for breakfast. Snacks throughout the day. Going to make a gingerbread house with the niece and nephew (easy entertainment for a couple hours). For dinner, beef tenderloin is a definite. Still planning the sites. Wife's making a homemade cheesecake. I'm thinking about making a batch of Alton Brown's egg nog a couple days ahead of time.

I love duck. Hands down, the best kind of fowl, for any occasion.

And hands down, the best way to cook is to confit.

Duck confit is very good, but a duck breast that has been rendered correctly and medium rare in the middle is really tasty too.
