Good vinegar based bbq sauce recipes?

Watching Chefs Table and seeing Rodney Scott's sauce got me thinking. I'm going to do some pulled pork next weekend and want to start making a good sauce to go with it.

Any threads already would help or your own recipe. Thanks!

2 cups ketchup
3 cups water
1/4 cup Apple cider vinegar
1/3 cup rice wine vinegar
1/4 tablespoons brown sugar
4 tablespoons Worcestershire sauce
2 tablespoon chile powder
1 tablespoon ground cumin
1 teaspoon salt
2 teaspoon coarse black pepper
1 teaspoon white pepper
2 tablespoon onion powder
3 teaspoon Paprika

Add all the liquid ingredients in pot, then add each dry ingredients mix well and bring to a simmer stirring often. Then reduce heat to low cook 15 mins.

Eastern North Carolina finishing sauce for pulled pork. I have this recipe memorized, and serve it with my pulled pork all the time. When giving "to go" portions to departing guests, they always ask for sauce to go, too.

1C white vinegar
1C apple cider vinegar
1T brown sugar
1T Cayanne pepper
1T Tabasco sauce
1t salt
1t black pepper

best if you make it at least the day before you serve it, it seems to improve overnight, like soup or lasagna

edit - only one "o" in Tabasco!

This recipe comes from Michael Ruhlman's and Bryan Polcyn's book Charcuterie

1/2 C minced onion
1 TBL minced garlic
1 Tbl vegetable oil
1/2 cup cider vinegar
1/2 C worcestershire sauce
1 TBL dry mustard
2 Tbls brown sugar
2 TBLs paprika
1 TBL kosher salt
1 TSP cayenne peper
1 C catsup

Sautee the onion and garlic in oil till softened, add other ingredients and cook for 15 minutes. Although it not in the recipe I put it all in a blender for a few pulses to smooth it out.

I've made this dozens of times and it is great for pulled pork. BTW...if you haven't already, I highly recommend the book if you're into cured meats. I've made canadian bacon, pastrami, corned beef , ham, salami and several of their spice mixtures.

I love his espresso sauce and it has some vinegar in it. Not really a 'vinegar based' sauce but it has a little tang with some great flavor.

Yes, I also frequently make Aaron Franklin's sauce.

Its not the same similar which most Texas style have a lot of the same ingredients. This what my German grandfather would make to serve on the side. He also made a mop to baste his meat, which was mainly beer, butter, apple cider vinegar, float a cut up yellow onion, paprika, chili powder, garlic powder, lemon juice, beef & chicken stock, black pepper, little tomato paste, and dash of vinegar hot sauce.

Almost the same as this. Add 1.5 cups apple cider vinegar and 1.5 white vinegar instead of water. I use 9% white vinegar. 1/4 cup of brown sugar. I also don't use white pepper. Everyone seems to love it.
