The Old-Fashioned has to be on this list, partly because you need booze, sugar, water, and bitters, and because you can make it with bourbon, rye, rum, or scotch.

Add a barspoon of sugar, a barspoon of water, and 2-4 dashes of bitters. Muddle until most of the sugar is dissolved (if it doesn't all dissolve, that is ok). Add two ounces of booze. Top with cracked ice. Stir until well chilled, and serve with the ice, or strain into fresh ice.

Add an orange twist if you use bourbon, a lemon twist if you use rye. Pineapple simple syrup is awesome with rum. Use less sugar with scotch.

    The Darcy Farrow
    2 oz Bulleit Rye Whiskey
    1/4 oz Ginger Simple Syrup
    3-4 Dashes Angostura bitters
    Fresh peeled ginger
    Ginger ale

to make this "quick and easy" to fit the theme of the thread pre-make a bottle of the syrup and keep ready in fridge and can omit the fresh ginger if in a hurry as well.

Its a spicy cool beverage that has bite and is still refreshing.

Username checks out! Had one of these for the first time last night and it was damned tasty. I think they used a dry cider instead of champagne but still a good summer cocktail.

Classic easy summertime cocktail is the Gin and Tonic. Get some decent tonic water like Fever Tree or Q Tonic, pre-cut a lime or two into wedges and keep the wedges in a tupperware in the fridge so you can grab one when needed. If that's too much trouble, just buy a squirt bottle of lime juice from the produce section.

    2 oz. gin over ice
as much tonic as you like
wedge of lime (or quirt of lime juice)

If you want to cut the calories, replace the tonic water with club soda and double the lime. Quick, delicious, refreshing.

If you're swapping soda for tonic I'd recommend Hendricks Orbium as the gin. The quinine and wormwood add bitterness that you'd otherwise get from the tonic.

    Tequila Sunrise:

2 oz. of tequila, I like Codigo
1 oz. of Grenadine (if you don't like it as sweet, just one dash should do)
6 oz. Orange Juice- if you're into pulp, this makes the drink even better IMO

I wouldn't consider most of these as quick cocktails, but I digress.

Add some elderflower liqueur (St. Germain) to the French 75 to take it to another level.

It's also tasty replacing the gin in the French 75 with vodka (French 76), or elderflower liqueur (French 77).

We have been doing the following quite a bit lately. I am usually just a bourbon on ice guy but I have been enjoying this. Highly recommend.

    2oz bourbon
    3/4 oz simple syrup
    3/4 oz fresh lemon juice.

shake with ice, strain into glass w large ice cube. My wife likes to top with a mint leaf - taste delicious with or without the mint though.

Also most probably know this but in case you don't.... simple syrup is just equal parts water & sugar. Place in saucepan over medium heat until sugar dissolves. We make a big batch at a time and store in fridge.

So it's essentially a whiskey sour without the egg white. I love the mixture of whiskey and lemon juice.

+1 on ranch water. Super delicious. Sometimes I'll use grapefruit topo Chico and/or add a squeeze of agave
