Im talking about the sausage and roll goodness. I will use the word interchangeably...sorry.

Unfortunately I no longer live around kolaches but want to make some for the early game tomorrow.

I live by an awesome european meat market and have damn near every sausage availablen to me...except boudin but thats another tragedy.

Have you made them from scratch and what have you found works best? Is it worth making your own dough?

Yes it's worth making your own dough. It's a pretty simple process esp. if you have a Kitchenaid. I'll get a recipe posted within the next day or two.

I just ranted about this on the Premium board, but, there's nothing wrong with saying Sausage Kolache. It's nuanced like Coke for soda. Basically in the absence of other kinds of Kolache, you'd typically specify Klobasnek. As in, "We're making Klobasniki" or "Will you pick me up a Klobasnek". If Kolache are around, you'd say Sausage Kolach. Example "I'm picking up Kolache, what kinds should I get" ....... "Apricot, Poppyseed, and Sausage". If there is a mixed box on the counter you'd say "grab me a Sausage Kolache".

When I'm making them homemade, I tend to stick to the traditional versions. Apricot, Prune, Poppyseed, homemade Farm Cheese, and yes, Sausage

How's this for hand written by an authentic 1st gen Czech Grandma. I'd use melted Crisco over the vegetable oil, but, you won't get complaints either way

I was trying to avoid this thread going down this way. Please dont. I dont care what you call it. Just wanted recipes.

3 packages or 3tsp yeast from a jar

A package of yeast is about 2.25 teaspoons. That's quite a bit of variation.

Other ingredients, sure. Yeast....just a difference in time. But you already knew that

So i did the following and i was pleased with them but the dough was not what isl was used too...may have wrapped them too thick. First time to do a homemade bread, so that was fun.

Used smoke kielbasa jalapeno and cheese

A packet of yeast
Cup warm water
Quarter cup warm milk
3/4 cup sugar
2 eggs
Salt
Melted butter
4.75c of flour

The dough was sweet which was i wanted but the texture wasnt as "crescent-ie" as i wanter. What gives to make it more that way in prep? Or in ingredient?

The trick is to take your recipe and tweak it until it matches my recipe

Usually it's in the prep. Over worked the dough. Do less and it will have more fluff.

Do you like chicken fajitas later in the day after your sausage kolaches? Are you going to load your glock ammo clips later as you eat some chili with beans.

How about karma kolache? What do you call a biscuit filled with boudan? Brisket? Mac & cheese? Pepperoni? Sausage and gravy? Philly cheezesteak?

I don't get why people get bent out of shape about food names.

No, that was all dictated to my sister in law not long before she passed away. The only thing of significance I do differently is melt Crisco instead of using the vegetable oil. Keep in mind, all of her eggs came from the farm so yolks would vary in size. I'm sure she just eyeballed it depending on what the chickens laid.

As far as the yeast, I'm betting she meant 3 Tbls not tsp. given HTowns conversation rate. I just use packets
