Brown butcher paper - worth the search?

Since watching Franklin's BBQ videos, I've looked for brown butcher paper. It seems like no grocery store or Academy within 30 miles carries it.

For those who have used it to wrap and rest brisket, what do you think are the benefits compared to regular white butcher paper?

Anyone around Austin have luck finding it? Maybe a restaurant supply company?

Yes. I'm old.

My wife orders everything we need and a lot we don't on Amazon.

I tend to only send her things to purchase that are specialty items or not made in the U.S. I try to buy locally when possible.

Now that we've proven that I'm old, ....what about the benefits of brown paper versus white or foil ( not for cooking but for resting)?

Peach, red, brown, white, it's all the same, doesn't make a difference. Just as it's doesn't have a waxed side is all that matters.

Don't know where you live but a butcher shop or wholesale place will likely have some if you don't want to go the online route. For example here in B/CS you probably won't find it in Kroger, HEB, etc. but can find it at ruffino meats across from the Bryan post office.

Use it, you will definitely get a better bark than foil and it won't steam the brisket like foil does which cuts down on the pot roast taste/texture. Resting you should just leave it wrapped in the same butcher paper from the cook. Just take it off the pit and rest it either on a counter or in a cooler depending on how quickly you need to serve. If the brisket came off early and you are really needing to hold it awhile, you can leave it wrapped in butcher paper and add a wrap of foil once it's done cooking and that won't affect anything, will just help it hold heat slightly longer.

I just get the white paper at the restaurant supply. I got 1,000' x 36" for $40 I think.

I was able to find Franklin's supplier through the various web of suppliers he has/used to have. He at one point sourced his paper from abco off Braker in Austin:

They do have a retail front, its been two years since I bought mine from them.

I picked some up at the TowerPoint HEB in College Station a few days ago. They had a lot.

In Houston, you can get the white uncoated BP (in different sizes), and
holder /cutters at Stewart's.
