Fried Shrimp - which is better?

For the batter:

Milk/Egg dipped in cornmeal and flour (fish batter)

or

Buttermilk (no egg) dipped in cajun seasoned flour (no cornmeal).

I've never tried the buttermilk/flour batter.

Any suggestions on a good fried shrimp batter?

I dust mine in seasoned flour then the egg wash and then panko. We just did it last weekend and I already want them again.

Here's a game changer Fried Shrimp recipe for you.

First I make a beer batter with Shiner and Self rising flour mixed to crepe batter consistency. Usually about a cup of flour and about 10oz beer + 1 beaten egg. Season the batter with some slap yo momma seasoning. Add peeled shrimp and let soak for about 2 hours.

Next I put a sleve of Keebler Club (town house or ritz are fine too) plus a sleve of Keebler Saltines in a food processor with about 1/4 bunch of parsley and zest of a lemon. Run processor until you have some relatively fine seasoned cracker meal. Dump in a large bowl and add in a 8oz box of Panko and a Cup of self rising flour. Season with about 3 tablespoons of Slap ya Momma. Mix well.

Take Shrimp out of the beer batter and dredge in crumb mixture pressing firmly. Lay out on a baking sheet until all Shrimp are breaded. Fry until Golden Brown at 350. Usually only takes a minute or so

Works great with fish too although I'll often add in Corn Meal as well for fish

I"m not a fan of cornmeal on shrimp most of the time. Great on oysters, but not on shrimp. That's me though. I also don't eat a lot of fried shrimp to begin with - grilled or sauteed is much more my style. But every now and again it is hard to beat some fried shrimp with some tartar sauce to dip in.

I go with egg/buttermilk wash and then bisquick.... sometimes add coconut.

I usually dip in buttermilk and then in equal parts flour/cornstarch that's seasoned with black pepper and cayenne.
