anyone have a good recipe? i have a ton of okra and peppers from the garden and have been wanting to try my hand at making some gumbo.

Does it have to be in a crock pot? Fido's gumbo recipe is awesome and not very hard.

Doesn't have to be just figured that would make for an easy option while I was working.

You can have an easy gumbo, or you can have a good gumbo.

I'd take the good route and will 2nd Fido's method

The problem with crock pots is most people don't do the necessary browning before they throw everything into the pot. Everything comes out lacking depth, tastes flat, is usually under seasoned, and is watery because you don't get the proper evaporation. So the problem with using one to cook a gumbo is that by the time you get done cooking all the meats and vegetables before you put them in the crock pot, you don't save that much time.

Didn't follow Fido's exactly. Used his general guideline and winged it with a few things. Turned out pretty damned good...

Some things should not be cooked in a crock pot. Of the things that come to mind gumbo would be the first.

Maybe not a crock pot but you probably could do it in an instant pot (utilizing it's saute functionality) and not have to worry about it as long as you aren't doing any seafood that would get overcooked...
