I'm also searching for a great beef tips recipe. The gravy kind, preferably that goes with rice but can be convinced to serve with noodles. Thanks in advance.

This is our go to. Crock Pot, easy peasy. My 9 year old's favorite meal. Only thing I would recommend is heavier on the corn starch to really get the "gravy" consistency.
