How long do you want to ignore this user?
What's the secret to getting a turkey burger to have some chew? For example if I order one at Mooyah it has a firmness and texture to it that I don't get when I make them at home.

At home I have to use filler such as breadcrumbs to get it to stick together. The final result is a serviceable sandwich without much flavor.

The only thing I could think of was to freeze them once the patty is formed then cook them straight from the freezer to the grill. Or use chemicals to glue them together, which is what I suspect the ones I like do.

I don't know if the texture is what you're going for, but these are our favorites. They are very soft when you first mix them, so I usually make the patties ahead of time and freeze them. The flavor is great. Make sure to use unsweetened applesauce.

Thanks FC, I'll give these a shot! When you freeze first, do you just throw directly on the grill/skillet frozen, or do you thaw first? Normally I'd thaw first but I think that going from frozen to grill could be the magical ingredient for the turkey burgers I've had that I like.

Im a big fan of this one by Cooks Illustrated. Probably not for everyone's taste, but I like it a lot / it has ricotta, Dijon mustard and Worcestershire but it has a nice crust and is very moist.

We do breadcrumbs and eggs and let them sit in the fridge for a while.

I take a 20 oz package of the 99% fat free turkey, add 6 oz of bacon and grind it all up. Mix in a 1/4 cup of panko breadcrumbs, form into 1/4 lb patties. Salt and pepper on top.
Generally makes about 6. I throw them on the grill. Comes out to 170 calories a patty, with 3.5g of fat and 36g of protein.
My finicky kids love 'em, and they're good in the fridge the next day too. You could easily add a bit of hot sauce or soy and change the flavor.

As far as restaurants go, the best turkey burger I've had is at Top Golf.

Add a little salt to the ground turkey and then mix it up a little. You will notice that the meat will begin to get a little sticky. The salt will solubilize the proteins in the meat and allow them to bind to each other. During cooking, they will firm up and bind back together to give you a firm patty.

Be very careful that you don't mix it too much or you will end up with a rubbery texture in the final product.

You may have to try it a few times to get it just how you like it.

1.25lbs turkey
tbsp. montreal steak seasoning
1 egg
a few dashes of worchestershire

we do them in the skillet. they'll never beat beef, but they're passable.

make sure you use ground turkey breast...as regular ground turkey is not that much different, health wise, then beef...

if youre eating turkey burgers for increased health.

Turkey burgers are absolutely terrible. I'd rather have a veggie burger.

While I agree with this, the whole point of a turkey burger (IMO) is to be healthy. It you're making it unhealthy, might as well just use beef.

Turkey burgers: ground turkey, mustard, BBQ sauce, diced onion, garlic, S&P, paprika, bread crumbs. Form patties and let sit for at least 1 hour.
