That said, here's my plan today to transport a smoked turkey. Does this sound viable?
I will pull the bird off the smoker at 165. After a 30 minute rest, I'll partially carve it. I'll remove the two breasts, thighs and legs, and wings. I'll put the pieces in food saver bags and vacuum seal them. After this, I'll put the sealed bags in a bucket of iced water in order to chill rapidly down below 40 degrees.
I'll take these bags in a cooler with ice to Dallas. It'll be about a 3.5 hour drive from north OKC. They'll spend the night in the fridge tonight.
For Thanksgiving, my plan is to reheat the turkey in really hot water while still in the bags. Once reheated, open the bags, finish carving the turkey, and serve. Sound like a good plan?
