Transporting cooked turkey today

First, thanks in advance for any reply. I don't post in this forum, so pardon any breach of forum etiquette since I'm just asking and not contributing.

That said, here's my plan today to transport a smoked turkey. Does this sound viable?

I will pull the bird off the smoker at 165. After a 30 minute rest, I'll partially carve it. I'll remove the two breasts, thighs and legs, and wings. I'll put the pieces in food saver bags and vacuum seal them. After this, I'll put the sealed bags in a bucket of iced water in order to chill rapidly down below 40 degrees.

I'll take these bags in a cooler with ice to Dallas. It'll be about a 3.5 hour drive from north OKC. They'll spend the night in the fridge tonight.

For Thanksgiving, my plan is to reheat the turkey in really hot water while still in the bags. Once reheated, open the bags, finish carving the turkey, and serve. Sound like a good plan?

Yes, as long as you don't mind flabby skin. If you want crisper skin, put it under the broiler for a few minutes before carving.

Flabby skin is fine to me. I'm not a big fan of the skin anyways -- usually give it to the dog. He's not picky.

I haven't tried this yet, but I saw this way of crisping the skin separately on Serious Eats.

Nah. It's a personal preference. Don't like the texture. And my Golden gets the goods anyways. He's part of the family.

If he's part of the family, you might want to feed him healthy dog food instead of trying to kill him with awful human food that's terrible for him.

So, everyone you're bringing this turkey to has the same preference? Or you're taking it to Dallas to eat alone?
