Higher mathematics such as 2+2 was never my forte, but since you brought it up & with a couple of assumptions and some internet rsearch, I came up with the following to verify what you said:
85/15 ground beef per USDA is --
64% water (zero calories)
15% fat assume all fat @ 9 Kcal/g = 136 Kcal
21% meat solids @ 4 Kcal/g = 84 Kcal
So if my Aggie math is correct, 136/220=61.8% of the calories from 85/15 is from fat.
Dunno if this is right, but it's what you were saying. Any meat sience majors wanna chime in?
