Grilled lemon honey chicken with rosemary

Marinade for 4 large chicken breasts:

2 sprigs of rosemary, chopped
2 TB lemon zest
4 TB lemon juice
1 TB honey
Splash of white wine vinegar
1/3 cup EVOO
Salt
Pepper



Served over thin spaghetti, Alfredo sauce, and grated Parmesan.

About 30 minutes while the grill heated up and I washed dishes. It was a last minute decision, but normally I would've done overnight. The chicken still had the flavors I was looking for.

You did right with the 30 minute marinade, since marinades don't penetrate the meat worth a damn anyways.

Can you explain further? Are you saying it wouldn't have mattered if he did 30 min vs. overnight or would it have somehow been bad to do it overnight?

I make a similar dish but usually try to go 3-4 hours. No particular reason for that time period but it tastes good so I keep doing it.

I always poke holes in chicken and steaks with a fork to help the marinade penetrate. I was taught this trick a lot time ago.

I made this soy-lime flank steak marinade last weekend. The steak soaked in a freezer bag with the marinade overnight. I think that made a huge difference:
