Can anyone tell me the intended purpose for this?

At my MIL's house there is an electrical box by the front door that has a coax and Ethernet cable in it. Appears to be original, so I'm wondering why the builder would have done that. Best guess ATM is a PoE camera, doorbell, or security device? TIA

It's just a prewire that they covered. Could be for intercom, security or ring doorbell type of application.

This is most likely. Ethernet cable is just 8 conductor solid wire cable used for all kinds of low voltage things by builders. The coax is probably a "just in case they decide to put a camera there" or blindly pulling coax to every place they pulled the cat 5.
