Tree Trimming - Red Oak in North Texas

I've got a 40 year old red oak with some limbs hanging really low. I trimmed about half (one side of the tree) of the low hanging limbs in February but still have another half to trim. Should I wait until winter or trim now? It's currently loaded with acorns. I'm also wondering if I could trim a few 2-3" diameter limbs for right now and do the rest in winter. Overall, wondering how much risk is there in trimming the tree now.

Read up on Oak Wilt. They recommend not pruning Feb-June to avoid the risk of it. I'd do it now before it cools off.
