We're wanting to replace our kitchen island top (currently 41.5 x 27) with a larger sit at butcher block -ish top (4 ft x 5 ft). My base plan would be to join two counter top sections together length-wise (biscuits, draw bolts, glue). Things would be way easier if I could just buy the island top as-is but I can find anything readily available.

Any ideas?

I'm confused. Doing the math, your current counter top is larger than the one you are talking about replacing it with. Am I misreading? Are considering trying to add a 4' x 5' section to your already existing top?

Oops. Typo on current size. Edited the original post to clarify existing top is 41.5 x 27.

If you're able to join two together w biscuits, etc why not just build a new one the size you want and be done with it? Seems it would be better looking plus the pride factor.
I don't think you know me.

Home depot has a butcher block island top already right about the size you're looking for and I have it in one of our rent houses. I was just there the other day and even with 3 kids there and them eating every meal at the island it still looks great. I used the 50 50 mix to treat it after I installed it and maybe gets another quote annually. I'll try and find a photo.

I just put in a 4x8 butcherblock island by joining two 24x96" walnut slabs from the Habitat for Humanity. Haven't oiled it yet, but it looks really nice so far.

Oiling is the least of your problems. Your missing a fridge, bro.

You can buy 24" wide ones (unfinished) from Floor and Decor. I've used a bunch from there - mostly beech but they sell maple and walnut as well. The edges are usually protected in shrink wrap and are pretty clean - I could see being able to glue 2 together with biscuits and glue without needing to edge joint them. I'd probably glue them while sitting on top of the cabinets so you wouldn't have to move them afterward. I'd also suggest using a track saw to cut them to length after gluing.
