I can only to speak to the Weiskopf course at Bentwater and Walden. Keep in mind my info is dated as I haven't been to either in 5 years or so. So I can't speak to current conditions, etc. As far as layout goes...
Between those two it's definitely Walden in my opinion. Walden is an awesome layout before Devlin-von Hagge got carried away. There's plenty of risk/reward holes. The best way I've heard it put is that almost every hole out there is a birdie hole and a triple hole (kind of like Crown Colony in that way).
Bentwater has 2 courses at their main facililty (Weiskopf and Miller) and a 3rd separate and extra high $ 3rd 18 across the street (Pines I think?). I've heard mixed reviews about the Miller but I feel like most say it's better than Weiskopf. Weiskopf isn't bad, but it's just not as interesting on the whole as Walden. It has a really nice back 9, but the front is pretty weak, and especially compared to Walden's layout.
2 postives to Bentwater vs Walden... Bentwater is probably a better/more upscale neighboorhood than Walden. Bentwater also has a little more terrain on their property than Walden does. Walden isn't totally flat, but Bentwater is a little more dramatic in places.
