If you're still planning on getting up to Breck, here are some recs to entertain 7 year olds (my youngest is 7, so these are all age appropriate).
Eric's Underground is as safe a restaurant rec as you can make. American food, little arcade to entertain while waiting for a table. It gets crowded at peak times, though, so plan accordingly.
Along with the crepe stand, my kids LOVE, LOVE, LOVE Stir Pan creamery at the south end of main street, near the OG Breck Brewing. I think the owner is a north Dallas native, too.
Country Boy Mine is a short drive from town (5 minutes, maybe) and fun for the kids to pan for gold.
On the south side of town next to the ice rink, you can do the quick troll hike and the loop around it for a bit longer excursion.
While the resort pumps up the EPIC summer activities, it's pricey and crowded if you're not up top of the mt when they open. Instead, we head over to Copper Mountain, where they have similar activities (alpine roller coaster, bungee trampoline, go carts, bumper boats, etc). It's NEVER crowded there, and you can check it off your list and then drive back and stop in Frisco for lunch before heading back to Breck.
For a fun and local hike, you can drive up 4 O'Clock Hill road, park at the base of one of the lifts and do the Snowflake trail hike. It's easy, shaded, and dumps you off at a reservoir your kids can "fish" on. Then, take the meandering ski run trail back down to your car.
Another place our kids like is south of town a bit - Montgomery Reservoir, just south of Hoosier Pass. It's a fairly quiet spot to fish, and has a neat old abandoned silver mine that only takes a few minutes to get to, good photo ops with mountains and stream.
Lake Dillon is very low this summer, but you can still drive a few miles north, and go up to Sapphire Overlook/Chipmunk Hill hike for the kids to feed the chipmunks and do the simple 1-mile loop trail.
River Park playground on the north side of town off of Airport Rd is great to let the kids burn off some energy, easy access to freeze their feet off in the Blue River, and it's right around the corner from Breck Distillery and Restaurant.
