Like Fezzik from Princess Bride, I only dog paddle.
I wasn't in too great of shape when I took the course but I managed to swim the required distance with a mix of freestyle and backstroke. What got me was the floating/treading water part because my legs tend to sink. My instructor allowed me to wear a wet suit (gives buoyancy) at the end of the day to pass that portion. You'll probably be fine.

There is a place for food in Uluru called the Pioneer BBQ and Bar where you can order various meats and other items and cook it yourself on their grills. They have a good mix of exotic meats (emu, kangaroo, etc.) and live music.

Beware of Beets! You have been forewarned. Aussies tend to put beets on burgers and any standard order of a burger will likely have a beetroot in the middle.

The fish market in Melbourne was a great place to eat and grab little bites from various vendors to try out. Barramundi, John Dory, and some interesting looking bugs (shellfish).

Another thing about Melbourne (I can't remember any other city that had this notation). Many streets have the notation of Lt or Little. This notation can be confusing if you are bad with directions or just are unknowing. For example, there is a Collins Street and a Little Collins Street. Another example, there is a Flinders Lane and a Flinders Street.

You can try Vegemite (Marmite) if you wish, but I don't see how anyone likes that stuff.

Do try Tim Tams. They are a pretty good chocolate biscuit.

Also try at least one meat pie. I loved Pie Face over there and there are now even some in New York city. It's supposedly one of the (if not the) fastest growing franchises in Australia. It is on the fast food side of things, so don't expect it to be too fancy.

If you like lemon, and you like soda, definitely try Solo. I still order some every year because I miss the taste.

If you were just going to do Australia I would also mention the Aussie Airpass by Quantas. This allows you to pay one fee and fly an unlimited amount of times around Australia for 30 days. They may have changed it up some but the idea is still similar to what they have now.

update:

my employer asked me to shorten vacation to two weeks and i chose to accommodate them.

so, new zealand got cut. and only biz class award flight rt i could find has be leaving from brisbane

current itinerary:

sydney 4 days - a beach and/or the zoo, bike tour, bridge climb, rugby match, day trip to blue mountains
alice springs - uluru, kata tjuta 3 day organized tour
cairns - uncle brian's bus tour, scuba dive gbr
brisbane - unknown

questions:
1. i have a beard. can i scuba with a beard? i've never scuba dived before. do i need to be clean shaven to scuba safely?
2. brisbane. basically have 1.5 days there, before an early start (7am flight) on the way home. suggestions on what to do for the day?

Qantas biz class was worth the extra points,, was able to sleep 6 or 8 hours on the flight there. most rest i've ever gotten on a flight



Sydney harbor bridge climb, while expensive, was a lot of fun and a very unique experience

lowenbraus was pretty good,, had the pork belly. definitely lives up to german food.

the burgers with the beets were pretty good. also enjoyed the vegemite in very small amounts

ate too many pies. they need to expand to houston. so very good

Park Hyatt has amazing views and is best hotel i've ever stayed at,, definitely recommend it if you have the $$$$ or awards available




Rugby game was pretty cool,, even if it was the first rugby game i'd ever seen. guy next to me was friendly enough to explain what was going on. nsw waratahs with the comeback win



Blue mountains day trip was worth the day trip



alice springs is dead,, nothing to do there, but, uluru, kata tjuta, and kings canyon were gorgeous. kings canyon hike and camping under the stars were probably my favorite experiences on the trip




did the uncle brians tour out of cairns, didn't really enjoy it. was expecting more of a hike through the rainforest tour, and thats not really what it was. backpacking crowd was too young/immature for my tastes. but thats just my opintion

tried scuba diving but never felt comfortable with it. snorkeling the reef was enjoyable though. glad that i can say that i've done it




brisbane was a nice place to finish up in,, wish i could have spent more time there. went to lone pine to hold a koala as my last event in australia

Gorgeous pics!! I'm traveling to NZ in a month or two and can't wait to get there! Hopefully I survive the flight in economy...haha.
