I wonder if you had a #3 11-1 team (X) play a #7 10-2 team (Y), with a #8 10-2 team (Z) who lost to X.

What would the committee say if X beat Y in the SECCG?

X is in, obviously.
Y is now 10-3.
Z is now 10-2.

Say only one (Y or Z) gets in. Which would it be?

The 5 highest rated conference champions autos is a bigger issue IMO. The lesser conferences can get an undeserving team into the playoffs. eg Clemson last year
