I guess a team that is desperate for a QB might take him, but who is to say he won't quit on you half way through the season? It's not even like he was facing adversity from a W/L perspective

I think the article makes it pretty clear that he left due to unfulfilled promises. NIL deals are effectively contracts in today's CFB and if the entities making these deals can't deliver on them then there are currently no repercussions for them.
Athletes in the college landscape are effectively professional athletes but without the title (NCAA and their dumb amateurism rules) . If a professional athlete didn't get paid they would do the same.

This is why NIL needs to go all the way or go away. All the way meaning a contract is signed, an escrow account is set up with whatever conditions are agreed to, and the if the contractual terms aren't met a lawsuit can be filed.

It's also his last year of college eligibility. He decided to use his redshirt.
