Now that we are entering conference play, it seemed like a good time to update this thread with current SP+ projections:

New Mexico: Win
Miami: Loss
UL Monroe: Win
Auburn: -7.4
Arkansas: -7.9
Alabama: 2.1
Tennessee: 1.9
South Carolina: -14.1
Ole Miss: 4.0
Clanga: -13.3
Abilene Christian: N/A
LSU: 3.6

There are a lot of strange results here, with Ole Miss now being the toughest game left of the schedule numerically, and general improvement across the board, despite what we saw against Miami. My gut says these numbers should be a lot worse, but it is hard to point to any individual team and say the numbers should be way off, either.
How can we be 2 TD favorites against SC and Miss St? SC has looked pretty good. Miss St not so great. I could see maybe being favored in both since they are home games, but not that much.

South Carolina had a good half against Georgia. South Carolina has not looked good. That being said, I think one of the biggest answers to your question is that SP+ thinks a lot more of our defense than most of us do (it has us with the #8 defense in the nation).

Then the projection is grossly wrong because we all saw this D get torched by Miami as if they weren't there at all
