The visits are scripted. The script will include travel info, arrival times, tour of the locker room times, meals, events like b-ball games, etc. The evenings are probably not so scripted. Parents may be on the visit too - and the university can pay their lodging but not the travel.
I have been on an official recruiting trip as a parent in the fall at A&M, though not for a football athlete. This included an A&M FB game. We had a huge lunch in Bright before the game with athletes in many sports. I remember Dat running around talking to football players and their parents (if present). We were escorted on the field during pre-game warmups. I remember standing near Damontre Moore - who was friggen huge. Then we were escorted to our first deck seats for the game.
Add: before lunch we were in the auditorium and Sherman spoke to the entire group for about 20 minutes. He is a class guy and said great things - especially for parents. I was shocked though that he could do this talk, about two and half hours before kickoff.
