Obviously I looked around in Google, but I'd rather see if anyone here has experience with any books either about him or have him as a feature character.

State House Press and TAMU has always got some great books,
I've read this one but don't remember anyting extremely positive or negative - I think I enjoyed it

Not exactly about Jack Hays, but the Empire of the Summer Moon talks about him a bunch. I highly recommend it.

Can't help you on the book, but it always amused me that Jack C. Hays High School in Kyle has the Rebels as their mascot, and used to have Dixie as their fight song. Jack Hays didn't even fight in the civil war.
