Not really single volume of the whole war, but "Washington's Crossing" is a really good book on the first year of the war, culminating with Trenton/Princeton.
1776. That being said, you really must read Partisans and Redcoats and The Road to Guilford Courthouse for more in depth study of the Southern colonies and of the later war and to lead one to Yorktown.
Yeah I still say 1776. Other very informative books would be the People's History of the American Revolution and Diary of Joseph Plumb Martin, An American Revolutionary War Soldier.
If you finished any of the recs please check out Partisans and Redcoats by Walter Edgar. It's an easy read yet really gets to the heart of the latter part of the war.
