You know what else is really good? I buy cauliflower mash at Trader Joe's. I haven't seen an equivalent at HEB, but you could probably blend up riced cauliflower and end up at the same place.
Anyway, I heat the cauli mash with a little heavy cream or half and half (or even just milk, depending on what I have in the fridge) and add in a generous amount of grated Parmesan. Lately, I've also been mixing in the frozen mashed sweet potatoes, also from Trader Joe's. I prob do 1/3 sweet potatoes and 2/3 cauli. You get the flavor of the sweet potatoes (which I love) without so many carbs.
You can also use more milk or cream or some chicken broth to thin out the cauli mash (minus the sweet potatoes) add more parm, some mozzarella, garlic, and pepper, and make a healthy "Alfredo" sauce (I call it caulifredo). The key here is getting the consistency right, and I don't have an exact recipe. I just eyeball it.
I don't eat regular pasta, but this "sauce" is good with edamame pasta (if you like that - some people find it kind of weird) OR with the cauliflower gnocchi (also from Trader Joe's). The cauliflower gnocchi is actually really good with a lot of different sauces.
