Easy healthy meal and snack recipes

How long do you want to ignore this user?
Any tips on a book or AP or website that has some good simple recipes? I'm doing a month long diet cleanup and I need some additional meal ideas that are easy and reasonably healthy. Anyone have a favorite book or source? I'll try just about anything and scale to my target calorie and protein intake as needed. Thanks!

You could look into whole30 meals/snacks. There are a bajillion blogs and and sites out there now it feels like. Even if you're not doing it full bore, using some of those meals or snack ideas should be helpful

Skinnytaste has a bunch of great recipes. She's got a website and several books that cover everything from quick, 20-min meals to slow cooker meals.

I would say most of what I cook is one of her recipes, or a slight modification of it.

As far as snacks go, Quest protein chips and 0% Greek yogurt with a little Stevia and PB powder (and maybe some fruit) are my go-to choices for low-cal but high protein/low-carb snacks. Built Bars are another good choice, if you're craving a cookie or chocolate.

The Quest chips and the Built Bars are more expensive. The Quest chips you can buy in packs of 8-12 from the Quest website, Walmart dot com, and iherb dot com. They will still be $2-$2.50 a bag, though. The Built Bars you can buy directly from the Built website. They are also about $2 each.

If you're looking for a cheap snack, I will sometimes eat a few slices of deli-turkey or ham and/or a low-fat mozzarella cheese stick. My son likes Chomps sticks, but I'm not really a fan. You might also like roasted edamame (you can find it in salted and wasabi flavors)

Oh, another cheap/easy snack is sugar-free/fat-free instant pudding. Make it with a high-protein lactose-free milk (like HEB Mootopia). I use a little less milk to make it richer (if the instructions say use 2 cups of milk, I use 1.5). Chocolate and butterscotch are good, especially if you toss in a few cacao nibs or chocolate chips. If you make vanilla or cheesecake, you can add some lime juice and lime zest to have "key lime pie" flavor.

Skinnytaste is our go to as-well. I have most of her books because they fit both my diet needs and my wife's vegetarian & WW diet.

Besides dinner, my meals and snacks are monotonous but it works for me:
High protein plain yogurt (Siggi's or Oikos Pro) with a homemade high fiber & oat granola (wheat bran, seeds, coconut, almonds, freeze dried raspberries bound with date syrup and avocado oil)
Fairlife Protein shake
banana (or sometimes an apple) with nut butter
Lemon Pepper tuna packet
Homemade roasted Trail Mix
Rainbow carrots and hummus

I don't eat everything every day and instead add or remove items depending on what's for dinner. Everything I pretty much can keep up at work so I'm never left to make poor choices. If I don't hit my protein goal, I'll end my day with a casein protein shake.
