Ground turkey tacos, ground turkey chili, ground turkey on a salad, ground turkey spaghetti.

Basically, replace fatty red meats with turkey.

Chicken & Rice!!

This is my staple. Very simple with basically 3 ingredients: Chicken, seasoning, and rice (or frozen veggies)

Purchase:
- Bag of individually frozen chicken breasts
- Your choice of dry seasoning like Tony Sacharee, lemmon pepper, BBQ rub, etc
- Rice. You can go anywhere on the bargain spectrum from the 20 lb bag of white rice to the single serving of Mahatma wild rice. I usually do in the middle with a 1 lb bag of brown rice.

Steps:
- Defrost 1 chicken breast in the microwave (DO NOT use the cook setting or it will ruin the chicken)
- Follow cooking directions for rice, but it is usually 1 cup dry rice + 2 cups water + tbsp butter + tsp salt. Bring to a boil, then cover and reduce heat to simmer for 20-25 min. I also sprinkle in some dry seasoning for the hell of it.
- Season chicken to taste (I usually drown that ***** in spices) then cook as desired. I still use the ol' George Foreman grill that cooks a thawed chicken breast in about 15 min. Other options are wrapping in foil and baking at 3:75 for about 30 min or pan frying (not sure how long).

I've lately been going with broccoli or spinach with fresh jalapeno and tomato instead of rice. In one form or another, this has been my cornerstone dinner for over 10 years and I still love it. Very healthy with plenty of protein and good calories at a very affordable price. There are a few modifications you can do to ease into the routine like buying Lipton pre-seasoned rice or noodles. Those aren't as healthy and are more expensive, but they probably taste better to most people.

One thing I should point out is that I have a high caloric need with my activity level and my portions of rice and veggies could probably feed 2-3 people in most cases.

Just stay away from turkey bacon...there are just some things that they don't need to make with turkey.

I'd say to use elk if you want better-tasing meat, more protein, and less fat than ground turkey. Buffalo is another great option, but it has a little more fat than elk.

SO and I were given elk and I have mixed it with ground beef. Made two meals out of it and both were delicious!

Fish or shrimp tacos are a good option. Real easy to cook the seafood in a skillet, then cut up some cabbage, onions, bell peppers, and/or avocados to go with it.

Another easy and healthy option is cooking some black eyed peas or black beans and add onions, peppers, and garlic. Cook for about an hour. Cube a small pork tenderloin (1 lb) and brown the meat, then add to the beans for an hour. Put on top of rice, or just have by itself. My wife and I had this on Monday and leftovers on Tuesday. Probably made 6-8 servings and cost <$10. We steamed some broccoli on the side as well.

Ground turkey is a good suggestion made by others. Easy to make chili with it or add to a boxed soup. Sprouts has pretty good deals on tasty pre-made soups.

97/3 = 97% lean, 3% fat. It's just a leaner stack of ground meat.

I've seen ground turkey that wasn't 99/1, so I think they sell it the same way that ground beef is sold.

The leaner the ground meat, the more expensive it usually is. Buy in bulk and freeze it if you can, especially if you're going to mix it with other things (marinara sauce).

the only thing I do notably different than the recipe is I cook the soba or udon noodles separately and then spoon the veggies/broth over the noodles. The kids really like this dish as well.

Where do you buy your elk meet? I'm over here in Superior... havent necessarily looked persay yet for elk meat

You're in luck then. Steve's Meat Market in Arvada. It looks like buffalo is still $4.50, but elk and elkalo (buffalo/elk) is $6.50 now. In addition to the burger meat, I highly recommend: elk teriyaki jerky, buffalo jerky, venison jalapeno cheese stix, buffalo cheddar dogs, and all of their breakfast sausages (elk italian, buffalo, and elk chorizo). I love that place and spend at least $50/month there.
