Title explains it; have a 2019 Silverado that started making this sound. Video isn't my truck but it's exactly what I hear. Anyone have a clue what's doing this?

Might be a bad bearing on a belt driven component, maybe power steering. Get one of those engineer stethoscopes from harbor freight and see if you can track down the source.

if you think it's an air on body whistle, you can use masking tape on body gaps, around the windows, etc to find or rule out the source.

Check any sort of drive belt tensioner.

How new are the tires?

10,000 miles on them. Had the transmission fluid changed, new tires, and differentials changed out in close proximity and some time in the middle of that it started. It only makes the noise while driving over 30 mph - doesn't do it while idling. The pitch gets higher while driving faster.

Found a message board that said it was torque convertor ; you guys are usually nails so thought I'd ask before taking it in.

I had a similar noise on my old Silverado when getting over 50 MPH and a high pitched humming. Turned out to be the tires and totally stopped when I get them replaced. But I was also thinking it was a torque converter.

Could be anything. Vibration and sound can travel through the drive line and be hard to pin down. But if you got a front diff and transfer case I'd think about that as well. I'd also look at the issue of whether trans fluid had ever been changed and changing at 160k might've done it in. You hear stories about that all the time. Some people say after a certain point, drive it until it fails or only change 1/3 of fluid at a time. Opinions on this vary.

Change all the fluids every 50k. Honestly first time I heard it was after getting the front end aligned but that was right after the 150k transmission fluid change. Differential swap was definitely after I heard it.

Do you have an 8-Speed transmission? I also have a 2019 Silverado, but I haven't heard anything close to what you posted.

Has your dealer ever done a transmission re-program? I had mine done twice before the warranty went out. My 8-speed has been better. It's by no means perfect, but I'll take better. I have 78.5K miles on it, and I haven't had any of the issues you listed...yet (knocks on wood).
