Also would appreciate thoughts on a fishing guide for a small group going deep sea, about 6.

We fish with Bob at www.Speck-tackler.com. He only fishes in the bay, so he won't be able to take you out deep sea fishing, but he might be able to recommend a good guide who can.

Can't help you with a house - we've always stayed at the Motel 6 of the Gulf Coast - The Flagship (at least the air conditioner was working last week - but we didn't have hot water for showers).

You might try Gary Greene for the rental. I'm working on a charter lead for you. Waiting on a contact. My friend owns Galveston Party Boats, but they only run large charters. I will have more info for you soon.
