That was the benefit of the Eden Terrace facility (now Reunion Court) is that they had a wing for people who needed little or no assistance (independent living) and could ramp up the level of the assistance (assisted living) as time passed if that was needed. And if they eventually needed memory care, they could move to the adjacent facility and still be near their friends.
My overall advice is to go to the places you want to focus on during the week, but also go on the weekends, and ask specifically to meet the activity director. That person will be the key to how much goes on and how diverse the activities are. There are some just going through the motions and doing the same 3-4 activities all the time, while others do a wide variety of things through the month and do field trips, etc. Some will have nothing scheduled for the weekends at all, and some have stuff going all week long.
