Buy this. With a little bit of practice and some You Tube videos, I am able to get knives that will shave and shear paper with the slightest of force. They sell fancier setups like this with more bells and whistles, but I honestly don't know how much sharper a knife can get.

Get a good 5,000/12,000 whetstone and finish up with a 20,000 or 30,000 stone learn how to use them and you just can't get a better edge.

There's a guy at the CS farmers market that sharpens knives. He's a nice guy and worked out a bender tip on one of my knives. It wasn't perfect, but it looks a lot better.

Also, get a stone and watch a YouTube on sharpening.

Do you feel that it grinds your knives down? I've heard a knife only needs sharpening about every 6 months but needs regularly honing.

It really depends on the quality of the blade and the work load. Is your knife skinning 6 deer a weekend, or slicing a few heads of lettuce for salads? If the former, it needs heavy honing regularly. If the latter, than not so much.

I bet it would be a tough job to compete with the grocery stores especially during the slow times of the year.

Sure they are not as good as a mom and pop bakery, but at about half the price, most people will go there for most baked goods..

Yeah, that is part of the reason I don't advertise big or do the themed pre orders. I prefer to stay fully custom, and pick and choose whether or not I want to take an order lol.

But seriously, my costs are already high. My pricing would get to be insane if I had to account for the overhead of a brick and mortar

Yup. I limit any special preorders and set my prices to cover me. I'm not trying to please everyone or grow huge. I want to remain truly handmade and baked day of.
