Is there a highly recommended local drywall guy that specializes in replacing the relatively small squares cut out from behind showers, toilets, and faucets to replace pipes? (And we need the new stubs secured to the wall as well)

You're right, we just did PEX.

Terry Allen with Allen drywall just did some drywall repairs in the bathroom yesterday and they did a great job. It was actually cutting out two spots that got wet due to shower leaks. I have used him four or five times myself and for clients probably a dozen times.
