I'm wondering if anyone can enlighten me on the food delivery schedules of B/CS restaurants. I'm specifically curious about the raw fish for sushi places, but am also interested in overall patterns if any experts can chime in. Thanks!

My sushi go to used to be Veritas, because Chef Tai was pretty darn proud of the quality of his seafood, and very forthcoming about its source, when it arrived, etc.
