I'm wondering if anyone can enlighten me on the food delivery schedules of B/CS restaurants. I'm specifically curious about the raw fish for sushi places, but am also interested in overall patterns if any experts can chime in. Thanks!

40 tempura is the answer. Crazy how fresh their sushi is. I've brought east and west coast folks there for meals when in town for meetings and they all rave about how good the sushi is right here in CS. One of my top 3 bcs restaurants for sure.

Owner is seriously picky about quality and she won't serve it if it doesn't meet her standards. She's a terrific person, amazing life story. Check it out.

You kind of have to question the particular places you are interested in individually. Agree about 40 Tempura, have heard nothing but good things.

My sushi go to used to be Veritas, because Chef Tai was pretty darn proud of the quality of his seafood, and very forthcoming about its source, when it arrived, etc.

I also miss Veritas sushi-- I also talked to Chef Tai and then the people who were preparing the food and they shared how particular they were. I have just been eating sushi whenever I wanted (40 Tempura, Oishi, HEB), but then it occurred to me that someone on this board might have some info about how food delivery patterns work here in CS given our distance from where I would imagine things like fish are delivered / flown in. No shade toward anyplace, just curiosity.

I had an unfortunate incident with oysters in Austin in a month not ending in R which has made me think about whether I should be more thoughtful / heedful of the rumor mill about other things...

Ate at 40 Tempura last night per recommendations here and it was excellent. I've never had raw sushi before, only cooked, until last night. The chicken hibachi was great as well, and the pork gyoza. We definitely will go back.

I'm looking forward to Tai's new sushi restaurant at Lakewalk...hopefully in 2022!

Fyi, most sushi served is tuna or salmon, and those are almost always previously frozen (salmon to kill parasites, tuna because it's flash frozen on the boat). So for those, there's not really a freshness concern. Other saltwater fish are probably fresh, so there's a real freshness concern.
