.............and I am a yankee from Natchitoches and Webster Parish. The dusting thing is not just Texas. My sister and brother-in-law own a crawfish restaurant in Minden, LA. They have been in business since 1992 and have always dusted the crawfish. I know, I have dropped many a bag in the pot helping out. Once boiled the crawfish are dumped into a large oval washtub, dusted, and then stirred with a boat paddle. Check out their website at
