Beef ribs on the grill??

I dont have a smoker and I dont like pork so lets get that out of the way. Can you cook beef ribs on a grill? I have a few buddies that semi-smoke some stuff using little boxes of water with wood chips in them that sit in the back of their grill. What's the deal with that? I am an amateur so any advice would be appreciated.

On your basic Webber you can smoke something for a couple of hours and then finish it in the oven. Not really smoking or bbq per se, but it tastes mighty fine.

SR90 is right, if a gas grill don't even bother.

But you can cook beef ribs on a normal BBQ pit, absolutely. What I do is season them up and baster them well in BBQ sauce and some mustard then I give them a semi-searing over the coals. Then I back them off the coals as far as I can cook them for about two hours, applying sop and/or BBQ sauce regularly. I add soaked mesqute chips to the fire as well. After that, if I have time or have not yet achieved the desired tenderness, I then sop them up again, wrap in foil and put them in the overn at about 250 for another 45 minutes.

I put em in the oven first. Salt and pepper to the hilt and wrap in foil, cook four hours at ~125. Finish on the grill with your BBQ sauce for ~20 minutes. Freakin' fall of the bone excellent.

My weber gold kettle has baskets to keep coals on the sides, and I can hinge up the grate to allow the addition of more lump coal. Pan fits in the middle and works like a champ!!

Being a Texan I'm all about Beef BBQ over Pork BBQ but this is one are if you're being honest that the pig just reigns supreme.

Other than that all those North Carolina vinegar sauce pulled pork "BBQ'ers" can blow it out there arse. It's all about beef brisket.

If you mean La Michocana, YES. Their meat is great. Short ribs, fajita, bistek ranchero, etc.... You really need to know a bit of Spanish to get what you want there though.

Ribs can definitely be cooked on a gas grill and taste mighty fine.

beef spare ribs are Flinstone style terrible. We've spit cooked them and it's just blah, even if you do them perfectly. Too gristly, too much so-so meat. Rib meat is better done seared like a steak, but beef ribs are too thick so you have to slow cook. Cooking them slow is just a cluster ****.

Beef short ribs cut cross ways and marinated/cooked mexican style are pretty freakin' awesome though. Like spicy little rib-eye bites.

str8, I disagree. It's the charcoal and smoke flavor that makes ribs and barbecue taste like it does, not just flame. You can approximate it with sauces and smoke boxes but it never tastes quite right to me.

I guess we just have to disagree. Certain subjects are holy in Texas: politics, religion, football and barbecue.

you can do baby backs on a gas grill and they'll be tasty. use water baths to steam and keep them moist by wrapping some of the time.

i would never do spare ribs on a gas grill.

For baby backs I use C&J's rub and wrap in foil for the first 1 hr 45 min, then unwrap and use Yucatan grilling sause to baste for the last 45 and they are incredible.

Is 2.5 hours enough for baby backs? I never cook them - stick to spare - but I thought they were a solid 3.5+.

It's plenty. I did it a little longer the first couple of times but they were so tender they fell apart as soon as you touched them.

I actually don't cook ribs too often, but when I do I don't use sauce or a smoke box. Just a rub and the drippings on the burner guard/ plate creates a smoke that adds to the flavor. I like mine a little seared on the outside and it is much easier to do on a gas grill. Like you said, everybody has a different opinion or taste.
