I didn't know and just took hams and straps and let cowboys have the rest. Huge mistake. Not gamey, closer to beef. Take more ice chests.

We had Nilgai on our ranch. They are a grazing antelope so are not gamey tasting at all. The meat to us tasted much like Addax or Scimitar Oryx. Very good imho.
Nilgai are very unique animals. Bulls can be aggressive.

For the money shoot an eland for meat.... similar taste. Excellent. Bigger than a buffalo. Make sure you have HUGE freezer space.

It's like a super lean beef, had to add beef fat to mine

It's leaner than venison or elk. Cook accordingly.

Tastes better than axis.

The two mature bulls I last ran into yielded 200 lbs of bone-in meat delivered to the processor. Each. As mentioned above, plan for freezer space.

Eland can get HUGE. Just massive, massive animals. Friend at the C5 had one, and they were slashing the price just to get this huge bull off their property. Ate them out of house and home and bullied everything away from the feeders. He was basically begging me to take it - but as stated, I have no room for the meat.

Agree with what most have said here. I got 250lb of hamburger made out of the bull I shot a couple years ago. Make everything with it (burgers, tacos, spaghetti, etc.). Have two toddlers at home that eat it no problem. Like others said it's super lean.

Somewhere between Wagyu black angus and a piece of shoe leather. Closer to the shoe leather than the angus from what I have heard.

But perfectly seasoned shoe leather.

The older bulls can be tough if not prepared correctly is what I've been lead to believe.
We had two bulls ( young guy and older bull) and three cows on our ranch when we bought it.
Sold the two bulls and one cow. Shot the other two cows. They were very good. Cut them as steaks, back strap steaks, tenderloin, rump roast. Used only rib meat and flank, neck etc. for grind.
Ours had been on protein and grazing grasses. They had fat on them and not rangy lean.
I guess they are like most game…taste depends a lot on their diet in many cases.

I assume you mean nilgai and if so, great. Its been one of the few wild game (ish) I've brought home aside from quail and rabbit that my gf has really liked.

Infact she has give me cash to buy extra big time tickets for the Nilgai Antelope Safari.

Keep the skirt steak.

Nilgai is fantastic from what I have had.

Nilgai is amazing. Not sure what some of these folks are doing with it to claim shoe leather. Nilgai is what the serve at Dai Due in Austin.

Agree. The ones we ate were tender and tasted tremendous.
I have been told by some high fence guys we dealt with that an old bull can be kinda rangy but we didn't experience that.
I'm sure a lot can have to do with age and what groceries they eat.
The best meat we had on the ranch was Addax and the Nilgai was as good as that….just my opinion.
Grazers are almost always more tasty than browsers.

I will admit that I have never eaten it. I do know a guy that shot one and he eventually ended up tossing it out after eating it several times. He shoots a lot of critters so I am sure he knows how to cook it. I guess it was just an old one. I am also of the thought that nothing taste better than a nice black angus cow.

I like your thinking! You made me hungry for a good steak. Think I'm going pull a couple of steaks to thaw for tonight right now!
