If the bbq is brisket, Jalapeno cheddar sausage sounds like a good side. Or maybe ribs.

Glad I'm not the only one that considers sausage a side dish.

If I was going to do sausage I'd just make pork belly burnt ends

You'd nail it but outshining the host is a risky move. I say go for it.

Maybe I'll do both, burnt ends and a traditional side. Establish dominance

I like you style. Do it. In El Campo?

Spicy cornbread.

Go loaded - diced onion, japs, lots of cheese. Someone mentioned cupcake tins, as you can make individual cakes for people.

Also done spicy corn - couple of cans of sweet & creamed corn, cream cheese, japs or diced green peppers, lots of paprika and other spices. Smoke if for an hour or so.

If you know how to pickle - infused red onions are fantastic. I do this habanero infused onion that has a decent amount of heat, but also has that great brine flavor to it.
Nobody cares. Work Harder

Smoked cream cheese dip
Smoked deviled eggs
German potatoes (have to be cooked at the location though if they are done right)
A good macaroni salad is hard to beat IMO
A fresh pasta salad with homemade dressing

He couldn't reach high enough over the counter to get a good angle.

Deviled Eggs. Gourmet Version. Look up a recipe.

I've always liked chicken salad made from the marinated grilled chicken I make for my chicken street tacos. Chicken, sweet pickle relish, mayo, boiled eggs - its delicious. Make finger sandwiches. Its the old Chick-fil-a recipe using the marinated chicken. Or, you can use a rotisserie chicken.
I know a lot about a little, and a little about a lot.

Probably late at this point but I'll throw this out there as a VERY different but super good side. You'll have at least one person ask you for the recipe…

Cabbage sweet potato slaw

3 cup chopped red cabbage
14oz spiralized sweet potato
Juice 3 limes
3 tbsp honey
3 tbsp olive oil
2/3 cup chopped cilantro
3 tbsp peanut butter
3/4 cup peanuts
4 green onion diced
1/4 tsp cumin
4 shakes red pepper flake
2 tsp salt
Pinch pepper

Lime, honey, PB, oil, salt, cumin, pepper, red pepper all wisked together to make dressing. Helps to heat PB and honey in microwave for 30 seconds before wisking. Pour over cabbage and sweet potato, sprinkle in cilantro and peanuts. Mix. Let set for 10-15 min.

Oh it's totally weird but it is wildly addicting.

My wife makes an old family German potato salad recipe that has been handed down to her through four generations. It makes regular potato salad boring.
Everybody ask her to make it at our bbq get togethers and family reunions.

This is the way. Same here I make my Grandfather's German Bavarian potato salad (Kartoffelsalat). Also make it for the holidays. I believe in one of the holiday food threads I've posted the recipe.

There's a cottage cheese salad from the Tom Perini cookbook that is a staple at our house. It is super good and a great barbecue side.

I don't think I have ever seen an ingredient combo so random. Only thing missing might be some bacon. I am not saying your mix wouldn't be amazing but wow.

I sometimes wonder just who in the heck puts these recipes together for the first time?? How do you do that?

Sometimes, you just start mixing stuff together.

I made up this orange salsa last week, and just put different ingredients based on experience in what I thought would work. I was only making it for a marinade, but it ended up being a very tasty salsa.

We had a friend make sweet potato salad a few weeks back because he's diabetic. I think that has cause a growth in seeking ways to apply sweet potatoes more widely.

This one os somewhat Thai inspired. Lime, peanut, cumin, cilantro… different cultures!

Do you cook the spiralized sweet potato?

I might give this a shot but not sure about raw sweet potato...
DiskoTroop
How long do you want to ignore this user?
No sir, raw. Let me tell you, I understand the hesitance. I was too. Spiralized it actually ends up just nice and crunchy, but quite palatable.

Think pickled matchstick carrots like you get on a banh mi…
